Ingredients:

  • 5 lbs boneless, skinless chicken thighs, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 3 carrots, sliced
  • 2 celery stalks, chopped
  • 1 pound potatoes, diced
  • 4 cups low-sodium chicken broth
  • 1 cup frozen peas
  • 2 bay leaves
  • 1 teaspoon dried thyme
  • 2 tablespoons of Sunfiber (Guar gum fiber)
  • Salt and pepper to taste
  • Fresh parsley for garnish
  • Sunfiber (optional)

Instructions:

  1. In a large pot, heat olive oil over medium heat. Add diced chicken and cook until browned. Remove the chicken and set aside.
  2. In the same pot, add more olive oil if needed. Sauté onions and garlic until softened.
  3. Add carrots, celery, and potatoes. Cook for a few minutes until vegetables begin to soften.
  4. Pour in the chicken broth, scraping the bottom of the pot to incorporate any flavorful bits. Add bay leaves, thyme, salt, and pepper.
  5. Return the browned chicken to the pot. Bring the stew to a boil, then reduce heat and simmer for 20-25 minutes or until the vegetables are tender.
  6. Add frozen peas and Sunfiber, stirring well to incorporate. Cook for an additional 5 minutes.
  7. Remove the bay leaves and season with salt and pepper to taste.
  8. Garnish with fresh parsley before serving.
